Ingredients
  • Tomato Sauce
  • 1 tbsp olive oil
  • 1/2 onion diced
  • 4 cloves garlic chopped
  • 2 Roma tomatoes diced
  • 10-15 grape tomatoes halved
  • 1 can tomato paste
  • 1/2 cup red wine or Marsala wine
  • juice of 1 lemon
  • 1/2 tsp sugar
  • salt
  • ground black pepper
  • red pepper flakes crushed
  • 3 tbsp Parmesan cheese
  • Meatloaf
  • 1 lb ground beef or turkey
  • 1 cup bread crumbs
  • 1/4 lb spaghetti cooked and cooled- Perfect for leftover pasta as well
  • 1 tsp salt
  • 1 egg
  • Fontina cheese shredded
  • garlic powder
  • ground black pepper
  • 2 sprigs parsley chopped or 1 tsp parsley flakes

Instructions
    Tomato Sauce
    1. Sauté onion and garlic in olive oil with dash salt and pepper on medium high heat for about a minute until onions become translucent. Add Roma tomatoes and grape tomatoes and sauté on medium- medium high heat for another three to five minutes until tomatoes start to break down. I like to mash them a bit at this point so the fibers start to become sauce-like.
    2. Add just enough wine to deglaze pot and stir. Add tomato paste and begin to stir until it becomes “sauce-like”.
    3. Add ½ cup of wine, lemon Juice (can substitute 3 tbsp of vinegar here) and sugar and stir until everything becomes consistent. Add salt and pepper to taste, a few sprinkles of crushed red pepper (can also add My Leaning Tower Italian Blend if you have), and Parmesan cheese.
    4. Cover, set heat to medium low and simmer for about 45 minutes to an hour, stirring occasionally. Let cool to room temperature before you work with it in the next steps.
    Meatloaf
    1. Preheat oven to 375 degrees. In a bowl combine ground meat, bread crumbs, spaghetti, salt and 1 cup of the sauce you just made and mix thoroughly. Then add egg and mix thoroughly.
    2. Put in a greased baking pan, spread more sauce on top of meat and put in oven for 40 minutes.
    3. Take out and grate Fontina cheese on top. Sprinkle garlic powder, ground black pepper and parsley on top (Or My Leaning Tower Italian Blend).
    4. Bake for an additional 15 minutes and then broil for 3-5 minutes to get a nice golden brown color on the cheese. Let sit 10 minutes before serving.
