Ingredients
- 1/2 Vidalia onion diced
- 1 tomato diced fine
- 2 strips bacon diced
- 2 cans Pinto beans white or navy beans, rinsed
- 1/4 cup white wine
- 1/4 cup tomato sauce
- 2-3 tbsp brown sugar
- 1 tsp garlic powder
- 2-3 sprigs cilantro diced
- 1 tsp paprika
- 1 tsp curry powder
- 1 tsp Worcestershire sauce
- 1/2 tsp ground black pepper
- 1 tbsp vinegar
- 1 tbsp hot pepper sauce
- 1 bay leaf
- 1 tbsp spicy mustard
- salt

Instructions
- In a semi deep frying pan, sauté tomatoes and onions in about a Tbsp of olive oil for about a minute until onions become translucent. Add bacon and sauté for another minute or two to brown bacon. Add beans and sauté for about 30 seconds to a minute. Add white wine, tomato sauce and stir in to incorporate all ingredients. Add the rest of the ingredients on the list (except salt) and stir. Turn heat to medium low and let simmer for about 40 minutes to an hour stirring occasionally. You can also cook in pot for about 20 minutes and then transfer to a 325 degree oven for an additional 25 minutes to get a truer baked bean flavor. Salt to tast
