Ingredients
  • olive oil
  • 1/2 onion diced
  • 4 cloves garlic chopped
  • 1 chicken breast or leftover chicken cubed
  • 1 sirloin pork chop or leftover pork cubed
  • 1-2 strips of bacon diced, with fat removed
  • 1/2 cup roasted red peppers diced
  • 3 Roma (plum) tomatoes in chunks
  • 5-10 cherry tomatoes whole but with a slit cut into them
  • 1/2 cup green olives diced
  • 6 oz can tomato paste
  • 6 oz red wine
  • 1 tbsp My Leaning Tower Italian Blend or equal mix of dry basil, dry minced garlic, parsley flakes and pinch of red pepper flakes
  • juice of 1/2 lemon
  • 1 tsp sugar
  • salt
  • ground black pepper
  • 1/2 tsp red pepper flakes optional for additional heat
  • Penne or Rigatoni
  • fresh grated Parmesan cheese

Instructions
  1. In a large, coverable pot, sauté onion and garlic in olive oil with a pinch of salt and pepper for about 2 minutes until onions become translucent. Add chicken, pork and bacon and brown. Add roasted red peppers, tomatoes, olives and sauté for another minute or two. Lower heat to medium low and cover. Let stew for about 15 minutes until tomatoes begin to breakdown. Smush tomatoes and stir to incorporate everything. Add tomato paste, wine, My Leaning Tower Italian Blend (or substitute spices), lemon juice, sugar and stir. Cover and let simmer for about an hour. Taste and sdd salt, pepper and red pepper flakes as desired. Remember, olives and bacon have a high salt content so taste before you salt.
  2. Prepare Pasta as directed but slightly undercook it (by two minutes or so). Transfer undercooked pasta into sauce with a ladle of the pasta water and let cook for an additional two minutes or so.
  3. Top with Parmesan cheese and serve.
Crockpot Instructions
  1. In a pan, sauté onion and garlic in olive oil with a pinch of salt and pepper for about 2 minutes until onions become translucent. Add chicken, pork and bacon and brown.
  2. Transfer to your crockpot and add roasted red peppers, tomatoes, olives, tomato paste, wine, My Leaning Tower Italian Blend (or substitute spices), lemon juice, sugar and stir. Cover and set to 4 hours or "high". After 3 hours, taste and add salt, pepper and red pepper flakes as desired. Remember, olives and bacon have a high salt content so taste before you salt. Cover and cook another hour. Then start from instruction 2 above.
