Ingredients
  • sesame oil
  • 1/2 onion diced
  • 3 cloves garlic diced
  • 2 chicken breasts diced
  • 1 tbsp lemongrass fresh, chopped, should only need to buy one sprig
  • peanut sauce
  • soy sauce
  • vinegar
  • paprika
  • cumin powder
  • ground black pepper
  • red chili powder
  • 1 cup Basmati rice

Instructions
  1. In a coverable wok or deep frying pan, sauté onion and garlic in enough sesame oil to coat (approximately 2 tbsp) for 1-2 minutes until onions become translucent.
  2. Add chicken, lemongrass, 1 tbsp of peanut sauce, 1 tbsp soy sauce, 1 tbsp of vinegar, ½ tsp each of cumin, paprika, and ground black pepper and continue to sauté for another minute or two.
  3. Add ¾ cup of water, 2 more tbsp of peanut sauce, 2-3 tbsp of soy sauce and 3 tbsp of vinegar, ½ tsp more of cumin and paprika. Add a good sprinkle of red chili powder (remember this stuff is potent, so only add a good sprinkle.) Set heat to medium low, stir, and cover. Let simmer for approximately 25-30 minutes.
  4. While simmering, you can prepare rice or can prepare rice beforehand. Typical rice preparation calls for 1 cup of rice to 2 cups of water. Bring to a boil, cover and simmer for 10-20 minutes until all water is absorbed.
  5. When rice is done, combine it with chicken mixture and stir thoroughly until all rice is drenched in sauce. Let rice sit in sauce for about 2-3 minutes and stir.
