Ingredients
  • 2 cloves garlic chopped or sliced
  • 1/3 onion chopped
  • olive oil
  • 1 lb veal, beef and pork cubed, 1 lb all together
  • 1 can tomato paste
  • juice of ½ lemon
  • 1 tbsp My Leaning Tower Italian Blend or create a blend of equal parts basil, dry minced garlic, parsley flakes with a pinch of red pepper flakes.
  • 1/2 cup vodka
  • 1/2 cup half and half or heavy cream
  • 1/2 cup frozen peas
  • 3 tbsp Parmesan cheese
  • fresh parsley or parsley flakes
  • ground black pepper
  • salt
  • Penne, Rigatoni, or Mostaccioli

Instructions
  1. In a coverable, semi-deep frying pan, sauté onion and garlic in about 1 tbsp of olive oil over medium high heat with a pinch of salt and pepper for about two minutes until onions become translucent.
  2. Sauté veal, beef and pork with onion and garlic for approximately 1½ minutes until it starts to brown.
  3. Add the tomato paste and stir until it is consistent and smooth.
  4. Add 1/2 tsp each salt and pepper, My Leaning Tower Italian Blend or substitute spices, and the juice of half a lemon and stir to incorporate everything. Bring to medium heat.
  5. Add the vodka and cream and stir until sauce is consistent in color and texture. Cover and simmer over medium low heat for 45 minutes, stirring occasionally to make sure sauce doesn’t stick to bottom of pan.
  6. Prepare pasta as indicated on box. Two minutes prior to serving, add the pasta, parmesan cheese and peas to sauce and stir to fully coat the pasta. Make sure all peas have been defrosted and are bright green.
