Ingredients
  • 1 potato small, peeled, boiled and mashed
  • 2 tbsp butter
  • onion 1/2 inch, chopped chunks
  • 1 clove garlic sliced
  • 2 stalks celery diced
  • salt
  • pepper
  • 2 tbsp flour
  • 1 cup white wine
  • 1 cup chicken broth
  • 1/2 tbsp My Leaning Tower Italian Blend or following spices: equal mix of dry basil, parsley, dry minced garlic, and 2 pinches of red pepper flakes
  • 1 lb leftover turkey or chicken cooked, diced
  • 1 cup peas and carrots frozen
  • corn or flour tortillas
  • spray oil

  • 1/2 tbsp My Leaning Tower Italian Blend or following spices: equal mix of dry basil, parsley, dry minced garlic, and 2 pinches of red pepper flakes

Instructions
  1. If you haven’t prepared the peeled and mashed potato yet, simply peel a small potato, cut it into quarters and boil it. Then mash and put it aside.
  2. In a large pot, melt the butter over medium high heat. Then sauté onions, garlic and celery with a pinch of salt and pepper for about 2 minutes until onions are translucent. Add flour and stir to incorporate and form a roux.
  3. Add the wine, chicken broth and My Leaning Tower Italian Blend (or substitute spices), and stir. Bring to a slow simmering boil while occasionally stirring. Once brought to a slow boil, take off heat, add the mashed potato and stir to incorporate and thicken. Taste and salt as desired. Set aside and let thicken while you prepare the casserole.
  4. Preheat oven to 350 degrees. In a greased casserole dish, place turkey or chicken, the frozen peas and carrots, and the sauce and mix thoroughly. Place the tortillas on top of the casserole and spray with the spray oil and dust with My Leaning Tower Italian Blend. Place in the oven for 25-30 minutes until tortillas brown. Remove from oven and let sit for 10-15 minutes.
  5. Cut casserole and place into a bowl.
