Ingredients
  • Pate
  • butter
  • 1 pear peeled & diced
  • 1 clove garlic sliced
  • 1/4 onion sliced
  • salt
  • pepper
  • 1/2 lbs chicken livers
  • 1/2 tbsp My Leaning Tower Italian Blend Or following spices: Equal mix of dry basil, dry parsley, dry minced garlic and a pinch of red pepper flakes

  • 1 potato small, peeled, boiled & mashed
  • 2 tbsp butter
  • 1/2 onion chopped in chunks
  • 1 clove garlic sliced
  • 2 stalks celery diced
  • salt
  • pepper
  • 2 tbsp flour
  • 1 cup white wine
  • 1 cup chicken broth
  • 1/2 tbsp My Leaning Tower Italian Blend Or following spices: Equal mix of dry basil, dry parsley, dry minced garlic and a pinch of red pepper flakes

  • 1 cup frozen peas & carrots

    Preparation Steps
    1. If you haven’t prepared the peeled and mashed potato yet, simply peel a small potato, cut it into quarters and boil it. Then mash and put it aside.
    2. If you haven't cooked and diced the turkey or chicken, or don't have leftover chicken or turkey you were planning to use, roast and dice it before starting the casserole section of the recipe.
    Prepare the Pate first
    1. In a large frying pan, melt 1½ tbsp of butter on medium heat. Add the pear and a ½ tsp My Leaning Tower Italian Blend or substitute spices and sauté for about 10 minutes. Remove and place in food processor.
    2. Using same pan, add a little more butter and the garlic and onion with a pinch of salt and pepper and sauté for about 3 minutes until everything is tender.
    3. Add the chicken livers and rest of My Leaning Tower Italian Blend (or substitute spices) and sauté for 4 minutes per side until cooked through and tender (should be slightly pink in the center).
    4. Let sit for 5 minutes and transfer everything into a food processor and add a tbsp of butter. Puree until smooth. Salt to taste. Once salted, place in a container, cover and refrigerate for about 2 hours.
    Tortilla Turkey or Chicken Pot Pie Caserole
    1. In a large pot, melt the butter over medium high heat. Then sauté onions, garlic and celery with a pinch of salt and pepper for about 2 minutes until onions are translucent. Add flour and stir to incorporate and form a roux. Add the wine, chicken broth and My Leaning Tower Italian Blend (or substitute spices), and stir. Bring to a slow simmering boil while occasionally stirring. Once brought to a slow boil, take off heat, add the mashed potato and stir to incorporate. Taste and salt as desired. Set aside and let thicken while you prepare the casserole.
    2. Preheat oven to 350 degrees.
    3. In a greased casserole dish, place turkey or chicken, the frozen peas and carrots, and the sauce and mix thoroughly. Place the tortillas on top of the casserole and spray with the spray oil and dust with My Leaning Tower Italian Blend. Place in the oven for 25-30 minutes until tortillas brown. Remove from oven and let sit for 10-15 minutes.
    4. Cut casserole and place into a bowl and top with dollop of pate.
