Ingredients
  • 1 can chick peas rinsed
  • 1 can your favorite beans rinsed
  • 2 cups frozen peas defrosted
  • 1 tbsp olive oil
  • 1/2 red onion
  • 3 cloves garlic
  • 1 cup fresh herbs of your choice (I used sage, parsley and taragon and dill)
  • 2 carrots
  • 2 Yukon Gold potatoes
  • 1 cup frozen or fresh corn defrosted
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tsp all spice or Chinese 5 spice
  • 1/2 tsp ground black pepper
  • 2 tbsp soy sauce
  • 2 tbsp horseradish mustard
  • salt
  • 3 tbsp flour

Instructions
  1. Preheat oven to 350 degrees.
  2. In a food processor combine Chick Peas, Beans, only 1 cup of the Peas and Olive Oil and puree until it forms a paste and there are no chunks of beans. Add Onion, Garlic cloves and Fresh Herbs and puree until smooth. Place paste in a bowl and grate the carrots and potatoes into the bowl. Add Corn and second cup of Peas and mix thoroughly. Add Cumin, Chili Powder, Paprika, All Spice or 5 Spice, Ground Black Pepper, Soy Sauce, and Mustard, and flour and mix thoroughly.
  3. Form mixture into patties and place on a greased (must be greased with oil) baking tray. The mixture will be wet, but should still form and keep patties. Place in oven and bake for 30 minutes. Take out of oven and let cool for about 20 minutes until the patties are warm, but not hot. The patties will not be firm. The will be soft in the middle. Place the patties in a large bowl and mash together again. Taste and adjust salt and spices as necessary. Then re-form patties and place on greased baking tray and put back into the oven for 15 minutes. Take out and flip the patties and continue baking for another 15 minutes.
  4. Serve on a bun, bread, or by themselves with horseradish mustard or make a simple vinegar and horseradish mustard dressing by mixing 1 part vinegar with 2 parts horseradish mustard, pinch of salt and pepper.
