Veggie Mashed Potatoes
- Cut potatoes in quarters and place with ¼ cup of carrots in a pot of boiling water until tender to the fork (20 minutes or so). Drain, and place in a bowl while still hot with a tbsp of butter, ¼ cup light sour cream, ¼ cup of broccoli, ¼ cup of frozen peas, ½ tsp of pepper, ½ tsp of salt, 1 tsp garlic powder and 1 tsp onion powder. Mash together with masher or back of fork and mix thoroughly.
