Ingredients
  • 1 chicken breast
  • My Leaning Tower Italian Blend (or mix of equal parts basil, dry minced garlic, parsley flakes and a pinch of red pepper flakes)
  • 4 cups arugula
  • 1/2 Vidalia onion sliced the long way
  • 1 clove garlic chopped
  • olive oil
  • salt
  • pepper
  • balsamic vinegar or 1/2 Lemon
  • 1/2 tomato diced
  • 1/2 avocado diced
  • 1 tsp fresh Parmesan cheese

Instructions
  1. Preheat oven to 350 degrees. Brush a little olive oil on a chicken breast and season with Salt and Pepper, and My Leaning Tower Italian Blend. Bake uncovered in oven for 35-45 minutes. Take out and let cool to room temperature and cut into strips.
  2. In an frying pan, saute onion and garlic in a little olive oil for one minute, no longer, no less, just to get warmed through and begin to flavor oil. Add splash of Balsamic vinegar or squirt of lemon and Arugula and warm for another minute just to let arugula just begin to wilt. Then immediately remove and place into bowl with the oil and balsamic vinegar from the pan. Add Avocado, Tomato and Chicken and gently toss with a little more balsamic vinegar (or Lemon) and a half teaspon of olive oil. Be careful not to crush Avocado. Salt and pepper to taste. Sprinkle Parmesan cheese on top.
