Southwest Chicken Egg Rolls


  • 1 lb cooked chicken diced or shredded
  • 1 tbsp Mexican Spice Blend or substitute equal mix of Cumin, Chili Powder, Oregano, Minced Garlic, Paprika
  • 2 tbsp cream Cheese
  • 1 tsp salt
  • 1 green onion sliced
  • 1 green peppers diced
  • 1/2 cup corn niblets
  • 1 tbsp Salsa
  • Mexican Cheese Blend shredded (monetrey, cheddar, queso fresco)
  • 1 tsp salt
  • Egg Roll Wrappers
  • vegetable oil


  • combine all of the ingredients (besides the egg roll wrappers and oil) with 1/4 cup of the cheese blend and mix thoroughly.
  • Place about two tbsp of the filling into an egg roll wrapper and fold as instructed.
  • Fry for about 3-5 minutes until golden crispy brown.
