Waffles Topped with Honey Bourbon Pulled Pork & a Poached Egg
Ingredients
- 2 cups flour
- 1 tsp salt
- 4 tsp baking powder
- 2 tbsp sugar
- 2 eggs
- 1 1/2 cups warm milk
- 1/3 cup melted butter
- 1 tsp vanilla
Spicy Maple Ginger Syrup
- 1/2 cup Maple syrup
- 1 tsp Sriracha sauce
- 1 tsp freshly grated ginger
- 1 tsp barbecue spice blend equal mix of cumin, chili powder, garlic powder, minced onion, paprika, mustard seed, pepper, brown sugar
Instructions
- In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
- In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
- Ladle the batter into a preheated waffle iron and spread with a heat resistant spatula. Cook the waffles until golden and crisp. Serve immediately.
Maple Ginger Syurp
- Combine all ingredients in a bowl and mix.
Constructing
- Place some pulled pork (link to recipe above ) on top of the waffle and top with a poached egg and a drizzle of the spicy maple ginger syrup.
