Cheddar & Herb Twice Baked Potatoes
Cheddar & Herb Twice Baked Potatoes
When you mash potatoes with cheddar, herbs and a little sour cream, then bake them to a crispy finish, everyone is gonna love that sh!t. Seriously
Ingredients
- 4 large yellow potatoes
- 3 tbsp light sour cream
- 1/2 tbsp butter
- 1/2 cup Cheddar cheese freshly shredded
- 1 tbsp Spank It Kopita Grecian Blend or create an equal mix of dill, oregano, parsley and dry minced garlic with a pinch of coriander
- 1/2 tsp ground black pepper
- salt
- olive oil or spray olive oil
Instructions
- Preheat oven to 350 degrees
- Bake unwrapped potatoes (do not wrap in foil) in oven for 45 minutes until they are tender to the fork.
- Remove and let sit for 15 minutes. Using oven mitts, carefully cut the potatoes in half. Then carefully- again using oven mitts- scoop out the potatoes with a teaspoon leaving a quarter of an inch rim all around and from the bottom and place the scoops in a bowl.
- Add the sour cream, butter, cheddar cheese, Spank it Kopita Grecian Blend or substitute spices, Ground black pepper and using a masher or large fork, mash the potatoes until smooth and creamy. Add more sour cream for more silkiness (oh, and fat. Don't forget...more sour cream, more fat and calories, so do at your own discretion) Taste and add salt accordingly.
- Then using a spoon or piping, re-fill the potatoes with the creamy filling. Then carefully brush or spray on a little olive oil.
- Place each potato half onto a greased baking tray and return to oven for another 15-20 minutes.
- Finish by broiling for 2-4 minutes to get a nice golden crisp crusty exterior.
